This dip is great for summer entertaining. You can even use corn right off the cob, if you want. We used the leftovers to top off our tacos the next night and it was delish! Enjoy!

When ripe, Jackfruit tastes kind of like pineapple, but more subtle. It's flesh is often used by Vegans as a meat substitute because when cooked, it can be shredded like pork. In fact, Jackfruit tacos are next on our list to make!
The pungent taste of Gorgonzola isn't for everyone, but we added apricots to balance the flavor, and it worked like a charm!
