SOUP - Pisgah Mountain Curry

We've been making this soup for years and thought it was about time we share it with our lovely customers. So easy to make and full of delicious ingredients, this soup is satisfying enough to serve for dinner. 

Directions: Add contents of bag to boiling water (8 cups for 11oz--4 cups for 5.5oz). Lower heat and let simmer for at least a half hour or until beans soften, stirring occasionally.

**Dried legumes absorb a lot of water, so it may be necessary to add more.**

Variations: Add coconut milk after water boils for a sweeter creamier soup. 11oz bag=6 cups boiling water and 2 cups coconut milk. 5.5oz bag=3 cups boiling water and 1 cup coconut milk. Even add a cup of coconut flakes!
