SOUP - Appalachian Lentil

    This hearty creation is full of healthy ingredients and rich in flavor. Lentils are an excellent source of fiber and contain important minerals, B-vitamins and protein. This is a great soup to eat before a hike, jumping in your kayak or even just to have as a warm lunch at work.

Directions: Add contents of bag to boiling water (8 cups for 9oz--4 cups for 4.5oz). Lower heat and let simmer for at least a half hour or until beans soften, stirring occasionally.

**Dried legumes absorb a lot of water, so it may be necessary to add more.**

Variations: Add a bouillon cube for extra flavor. Add more vegetables, some cooked sausage, ham or bacon!

INGREDIENTS: Lentils, mushrooms, potatoes, onions, carrots, celery, spinach, garlic, sage, marjoram, sea salt, pepper.
