Roasted Garlic & Baked Goat Cheese

Fall always gets us in the mood to roast some veggies, and roasted garlic is one of our favorites! We paired it with baked goat cheese, a little jalapeno jelly and our Olive Oil crackers and ended up with the perfect snack for a chilly day. (recipe below)

We love roasted garlic not only for it's sharp taste and buttery texture, but for its numerous health benefits, especially during cold season. It's not chock full of vitamins, but garlic is rich in immune strengthening molecules which makes it very effective against bacteria. It's been proven that a daily dose of garlic can aid in fighting off infections which means fewer colds and shortened symptoms. 

Garlic boasts many other health benefits including the ability to reduce the risk of cancer, lowering blood pressure and reducing blood clots which contributes to heart health. It also combats the plague and of course repels most vampires. And garlic is just as nutritious roasted as it is raw! 


Pre-heat oven to 400°F

On a baking sheet, place garlic on aluminum foil, cut large enough to totally wrap all heads. Trim about 1.4 inch from top of each head, exposing tops of all cloves, then peel most of the paper off the garlic. Drizzle olive oil over tops, allowing it to sink into the cloves. Gather the foil and wrap garlic completely. Bake in the oven for 40 minutes. Check to see if it's soft by inserting a knife into a clove. It should be golden and have a buttery texture. If not, bake an additional 10 minutes until done. 



8 oz. goat cheese (rolled into a 1 inch wide log)

1/4 cup seasoned breadcrumbs

salt & pepper to taste

1 Tsp. Olive oil


Pre-heat oven to 375°F

Combine bread crumbs, olive oil, salt & pepper. Cut log into 1/2 inch rounds and brush each side lightly with olive oil. Roll rounds into the bread crumb mixture, pressing until covered. Place each round on cookie sheet and bake for 6 to 7 minutes, or until soft. 

Serve warm with roasted garlic, our Olive Oil crackers and jalapeno jelly!
