Sweet Corn Dip

Ya know that feeling when you dunk a chip in a dip and it breaks? Ugh! Then you attempt to use another chip to get the broken piece out..then that one breaks too. Then you look around, make sure no one is watching...and pull the broken bits out with your fingers...then you have dip all over your digits. What a nightmare!!  Well that doesn't happen when you dunk a Roots & Branches cracker! Our sturdy crackers stand up to any dip!! Don't believe us? Then try this recipe for Sweet Corn Dip and test it out yourself!

This dip is great for summer entertaining. You can even use corn right off the cob, if you want. We used the leftovers to top off our tacos the next night and it was delish! Enjoy!


  • 2 cups of sweet corn (fresh, canned or frozen)
  • 15 oz. can black beans (drained, rinsed, pat dry)
  • 1/2 cup Mayo
  • 1/4 cup Sour cream
  • 1/2 cup Feta (crumbled) 
  • 1/2 Tsp. Lime juice
  • 1/2 Tsp. minced garlic
  • 1/2 cup tomatoes (diced)
  • 1/4 cup red onion (diced)
  • 1/2 cup avocado (chunks)
  • 1/4 cup fresh cilantro (chopped)
  • Salt and pepper to taste


In a large bowl, mix all ingredients except avocado. When mixed will, add avocado and mix lightly. Refrigerate until ready to serve.
