Oh man....yum, yum, yum!! We were looking for a light, fruity spread for spring and we found it!! We wanted it to be sturdy enough to spread on crackers, but if you sub one cream cheese for a cup of yogurt...sounds like a delicious dip! Hope you enjoy this recipe as much as our guests did!
2 - 8oz. cream cheese (softened) - we used reduced fat
1 - 8oz. can crushed pineapple (drained) - we used fresh pinapple
1 cup Pecans (chopped)
1/2 cup green bell pepper (minced)
1/4 cup green onions (minced)
1/2 tsp salt
1 tsp garlic powder
1/4 tsp pepper
Mix cream cheese until smooth, then add all the other ingredients (except pecans) and mix well. Sprinkle Pecans on top then refrigerate for at least an hour. Best to make the night before so flavors set in.
**You can make these into cheese balls as well. Form into whatever size you desire, then roll them in the pecans.
