Baked Ricotta Spread

I know we always say our recipes are easy...and this one is no different. But when you're entertaining friends and family, easy is the best way to go! This creamy spread is so delicious, people will think it was difficult to make. The lemon and fresh rosemary are really what makes this spread special, and a perfect topping for our Rosemary Crackers! Enjoy!

What You'll Need:

1 Cup Ricotta

1/4 Cup Grated Parm

1 Tsp roasted garlic (minced)

2 Tbsp olive oil

1 Tbsp lemon juice

1 Tbsp fresh rosemary (finely chopped)

1/4 Tbsp fresh Thyme (finely chopped)

Salt & pepper to taste

(For Topping):

1/4 Cup shredded Mozzarella

Lemon slices

Sliced grape tomatoes

few sprigs of Rosemary


Preheat oven to 400. Mix all ingredients, (except the ones for topping) and pour into an oven safe dish. Place several lemon sliced on top, as well as tomatoes. Sprinkle with mozz cheese and finally, a few sprigs of rosemary.

Bake at 400 for 15 minutes, then broil for 5 minutes, or until brown and bubbly on top.

Serve warm with Roots & Branches Rosemary Crackers!!
