We were looking for a spread with more of a "bite", and immediately thought...Gorgonzola!! Knowing this pungent cheese isn't for everyone, we added apricots to balance the flavor, and it worked like a charm! This is a great spread to add to a charcuterie board because just a little dab will do ya. Enjoy!!
2 - 8oz. blocks of cream cheese (we used reduced fat)
5 oz. Gorgonzola crumbles
4 strips of cooked bacon, crumbled (we used turkey bacon)
1/4 green onions, chopped
8 oz. Apricot preserves
1/4 cup dried apricots, chopped
Just mix it all up!! Refrigerate for at least an hour before serving.
